@TheLegend1245 I love your joke. If you're serious then I feel bad for you, if you really want to be a smart chef I recommend watching Foodwishes' videos. Chef John has some great recipes and he doesn't act like a pretentious ass. In fact I see one of his videos in the suggestions column "Inside-Out Grilled Cheese". But seriously, he's much better than these guys.
The best burgers are the simplest ones... 80/20 ground beef, salt, pepper, cheese. You don't need grilled pineapple or pesto, it takes away from the flavor of the meat! American cheese is good because it's mildly salty and it melts really well.
@hrappaport95 a southern hoop cheddar replaces american very well because it has your classic cheddar taste yet it melts nice and gooey like american, and its not processed in some factory .
i man the grill at our jet tailgates and theres atleast 50-60 people there on a good day. they prob eat 3 burgers each. theres no fucking way im doing all this.
This guy thinks that because he has a French accent we will take him more seriously. Everything he says is either obvious (don't overcook or undercook) or a simply lie. Searing meat does nothing - read up on it. He says to not season the meat before cooking and then seasons it. Stupid pretend French twat with something to sell.
If you are an American, and you are so bad at cooking burgers that you need to have a Frenchman tell you how to do it, you are not only doing it all wrong, you deserve to be shot.
I agree that you shouldn't press it down on the grill, but I'm fairly certain that a pre-seasoned hamburger isn't going to...do any of the things he said it would <_< It most certainly won't leech any of the juices out.
By the same token, searing does NOT seal in the juices. If you really think about it, it doesn't make sense. How would violently heating something with high heat do LESS molecular damage? Not to say you shouldn't cook burgers fast, but it doesn't work that way.
@mattyg5467 The burger was not invented in the United States it originated in germany and German immigrants introduced it to america. Stupid American.
1. too many ingredients, overcomplicates the flavour. In the case of burgers, less is more
2. the patty is far, FAR too thick. this is a burger not a rissole or a meatball. the point is a good amount of sear vs a relatively thin layer of meat as the sear is flavour and you don't want too much meat vs too little sear
3. a big slab of onion to chomp through. caramelised or not, that's doing it wrong.
4. pesto and seeded mustard together. you have got to be kidding
FOR THE LAST BLEAPING TIME: SEARING DOES NOT BLEAPING SEAL THE JUICES!!!! I cant believe that with all the food science and knowledge there are still chefs that say that... for the love of God, CHOW even has a video of McGee, the father of molecular gastronomy, which dispels this myth. Pathetic...
@langhalsen obviously his version of the burger is a bit wrong than ours, but the tips are extremely useful, don't look at what he made, look at how he made it :)
I thought you say we are using prepackage buns is wrong, But you said it wrong. Actually you are going to say "If you're toasting a bun too early, you are doing it all wrong". I found out that you say "what is EYE LIKE REAlly". Read the capital sound louder.
No offense, but In my opinion you are overcomplicating it lol. i prefer a burger that is seasoned at most. You dont really need all those other things you were putting in there like mustard seeds and stuff... too much mate.
burgers are meant to be eaten with your hands not a knife and fork. that thing is way to big to be eaten the way it is supposed to be. Why are frozen burgers wrong? Why are lean burgers wrong? People like what they like. Not every food has to be made with flare. It probably cost you 20 euros to make those burgers. Half a euro for my frozen burger suits me fine tastes pretty good too and to aprophecy92, 5 minutes really? For this burger that he just made it more than likely took an hour
@dendog21 You can eat burgers anyway you want, just like how you said everyone has different taste. Lean and frozen burgers are like the "fake burgers", frozen burgers are just gross, stored fat, and are disgusting if you have such bad taste buds, lean burgers they're okay, but, the don't have the moist, tender, and chewy texture to it. Burgers are cooked/grilled about 15-20 minutes, while he is slicing his meats and putting flavor in it takes about 5 minutes, that's not even CLOSE to an hour.
smokes slightly?? no sir, oil smoking is an all or nothing kind of thing, its hot enough just BEFORE it smokes.. How do you tell just before something's going to happen, well I'd explain that to you but to be honest, if you think "slightly smoking" damages the oil any less then any other degree of smoke, you just wouldn't understand.
What! Are you going to let a Frenchman teach you Americans how to make a Hamburger - They are always doing this. Only last year the french have formally declared the "non-existence" of our beloved British Custard (The Bastards!) now it seems is your turn - someone make a video showing them the correct way to spread Brie in a Baguette and see how they like it!
are you guys fuckin stupid? just cook it for like 2 more minutes. if any of you say that the frozen one tastes better than the homemade one you must be americans. i always make my own burgers. its only becuase your lazy and dont want to take the 5 fuckin minutes
@Aprophecy92 Must be Americans? What the hell does that mean? You will find most of the best cheeseburgers/hamburgers in United States, obviously. I'm American and I don't use terrible frozen patties.
@blizztrollshard well you cant denie that SOME americans would rather eat the crap than make a good one. im not racist at all. alot of canidians are fat shits too. didnt mean to come off like that. ive been to america and yes ive eaten the best burger of my life. i was just saying that alot of americans and canadians rather use the frozen one. but since there are more americans than candians i said that. didnt mean to affend so many people sorry.
@dav61474 I and my years of active duty service in the U.S. Army would disagree with you, friend. As an American, I take pride in my country and the fact that we can eat our burgers how we choose. However, I also find it sad that some Americans would rather eat frozen beef patties than make their own burger.
@Aprophecy92 Dude, fuck you and your assumptions. I was gonna thumbs you up until I saw that ignorant American comment. We are not all like this, jackass.
The guy obviously knows what he's doing, but the idea that searing the meat seals in the flavor is a long-debunked myth. Searing it actually makes the meat dryer. But it DOES taste better - the effect is essentially the equivalent of caramelization for meat.
No, if you're adding a million and fucking one UNCOMMON INGREDIENTS and then decry probably over a BILLION people around the world for making a traditional staple, with many different variations, YOU'RE doing it wrong.
If you are going to insist upon a cocky format for your "educational" videos, I would suggest that you not insist on being so wrong. Sure, this was a neat way to cook a burger, but any dry houseburger with a soggy bun and ketchup kicks it's ass any day. Now go eat hair.
@benskin79 u r so rite my friend. they do things so 'high class-like' they don't consider. Yo. no need for fancy things. people are doing it everywhere. its become a right thing now.
@bilz0r It isn't nonsense. The experiment which "Debunked" took two steaks the same weight. They seared one and then put both in an oven. When they pulled them out and weighed them, they found the seared steak weighed less. They said that it was from water loss.
The debunk was debunked as inconclusive because fat wasn't taken into accounts. The fat to muscle ratio can't be measured properly. Bad experiment.
In the end searing does make the juiciest servings, compared to other methods.
@bilz0r Basically, when comparing oven cooked to searing the steak. The searing option gives the nicest effect. Oven cooking takes longer and you end up with tough meat, if you did preserve any juice at all.. it's pointless.
Meanwhile searing the meat is a quicker method. Searing helps texture and flavor. You end up with a nicer meal if done properly.
Chefs definitely do know what they're talking about.
@9700ghost Wut? So you've pretty much admitted that searing doesn't seal in juices. Any one who has cooked a piece of meat knows this, the water and fat comes up through the other side of the steak. I'm sure you're also aware that searing meat doesn't actually make it the juiciest. Sous Vide anyone?
so many people are doing it all wrong...we are seeing this videos for FREE...you shouldn't have criticized these people..if you dont like these tips then keep it to yourselves
Yeah! Great! But now look at the size of that thing. How are you supposed to eat that?

No, if you're adding a million and fucking one UNCOMMON INGREDIENTS and then decry probably over a BILLION people around the world for making a traditional staple, with many different variations, YOU'RE doing it wrong.
If you are going to insist upon a cocky format for your "educational" videos, I would suggest that you not insist on being so wrong. Sure, this was a neat way to cook a burger, but any dry houseburger with a soggy bun and ketchup kicks it's ass any day. Now go eat hair.

I can't believe chefs are still talking about "sealing" meat. This was shown to be a nonsense over a decade ago.
bilz0r 2 months ago
@bilz0r It isn't nonsense. The experiment which "Debunked" took two steaks the same weight. They seared one and then put both in an oven. When they pulled them out and weighed them, they found the seared steak weighed less. They said that it was from water loss.
The debunk was debunked as inconclusive because fat wasn't taken into accounts. The fat to muscle ratio can't be measured properly. Bad experiment.
In the end searing does make the juiciest servings, compared to other methods.
9700ghost 2 months ago
@bilz0r Basically, when comparing oven cooked to searing the steak. The searing option gives the nicest effect. Oven cooking takes longer and you end up with tough meat, if you did preserve any juice at all.. it's pointless.
Meanwhile searing the meat is a quicker method. Searing helps texture and flavor. You end up with a nicer meal if done properly.
Chefs definitely do know what they're talking about.
9700ghost 2 months ago
@9700ghost Wut? So you've pretty much admitted that searing doesn't seal in juices. Any one who has cooked a piece of meat knows this, the water and fat comes up through the other side of the steak. I'm sure you're also aware that searing meat doesn't actually make it the juiciest. Sous Vide anyone?

Apparently, some people cannot comprehend well. He said do not season the burger AHEAD OF TIME. Jeebuz.
