    Just because the burger was still juicy at the end, it does not imply at all that sealing meat does work. In fact, it was probably because of the fact that the burger was:

    1) thick

    2) stuffed with juicy short ribs

    3) cooked rare.

    Ask any fine-dining chef (or even someone on food network.. if you have those connections O.o) and they'll say that sealing the meat is one of the most important parts to cooking. That's why they always want a sear on the outside.

  • @TheLegend1245 I love your joke. If you're serious then I feel bad for you, if you really want to be a smart chef I recommend watching Foodwishes' videos. Chef John has some great recipes and he doesn't act like a pretentious ass. In fact I see one of his videos in the suggestions column "Inside-Out Grilled Cheese". But seriously, he's much better than these guys.

  • The best burgers are the simplest ones... 80/20 ground beef, salt, pepper, cheese. You don't need grilled pineapple or pesto, it takes away from the flavor of the meat! American cheese is good because it's mildly salty and it melts really well.

  • I agree that you shouldn't press it down on the grill, but I'm fairly certain that a pre-seasoned hamburger isn't going to...do any of the things he said it would <_< It most certainly won't leech any of the juices out.

    By the same token, searing does NOT seal in the juices. If you really think about it, it doesn't make sense. How would violently heating something with high heat do LESS molecular damage? Not to say you shouldn't cook burgers fast, but it doesn't work that way.

    1. too many ingredients, overcomplicates the flavour. In the case of burgers, less is more

    2. the patty is far, FAR too thick. this is a burger not a rissole or a meatball. the point is a good amount of sear vs a relatively thin layer of meat as the sear is flavour and you don't want too much meat vs too little sear

    3. a big slab of onion to chomp through. caramelised or not, that's doing it wrong.

    4. pesto and seeded mustard together. you have got to be kidding

Lean and frozen burgers are like the "fake burgers", frozen burgers are just gross, stored fat, and are disgusting if you have such bad taste buds, lean burgers they're okay, but, the don't have the moist, tender, and chewy texture to it. Burgers are cooked/grilled about 15-20 minutes, while he is slicing his meats and putting flavor in it takes about 5 minutes, that's not even CLOSE to an hour.

  • The guy obviously knows what he's doing, but the idea that searing the meat seals in the flavor is a long-debunked myth. Searing it actually makes the meat dryer. But it DOES taste better - the effect is essentially the equivalent of caramelization for meat.

  • I can't believe chefs are still talking about "sealing" meat. This was shown to be a nonsense over a decade ago.

  • @bilz0r It isn't nonsense. The experiment which "Debunked" took two steaks the same weight. They seared one and then put both in an oven. When they pulled them out and weighed them, they found the seared steak weighed less. They said that it was from water loss.

    The debunk was debunked as inconclusive because fat wasn't taken into accounts. The fat to muscle ratio can't be measured properly. Bad experiment.

    In the end searing does make the juiciest servings, compared to other methods.

  • @bilz0r Basically, when comparing oven cooked to searing the steak. The searing option gives the nicest effect. Oven cooking takes longer and you end up with tough meat, if you did preserve any juice at all.. it's pointless.

    Meanwhile searing the meat is a quicker method. Searing helps texture and flavor. You end up with a nicer meal if done properly.

    Chefs definitely do know what they're talking about.

Any one who has cooked a piece of meat knows this, the water and fat comes up through the other side of the steak. I'm sure you're also aware that searing meat doesn't actually make it the juiciest.
