  • Lovely, also see tip below on adding red wine BEFORE tomatoes, but..BUT..using canned tomatoes instead of fresh tomatoes is a big shame. Just cut a cross in each end of each tomato, drop in boiling water for a few seconds and they are super easy to peel. Its just 1 more minute, but a world of difference! Use Plum Tomatoes if available.

    Canned tomatoes are perfectly fine to use, given fresh are not always in season, and many good companies that make crushed, canned, or whole-canned, pick and can at the peek of ripeness in the first place. I've spoken with a few cooks in my time, who say if you have fresh on hand, or in season, go ahead, but there is -no- shame in canned when and if it is needed. Again, fresh isn't always available.

  • To my meatballs, I add 1 lb pork and 1 lb beef, 1 egg, crushed garlic, seasoned salt and pepper, parsley, bread crumb, parmesan cheese 1 quarter cup, mined onion 1 half cup and a pich or 2 of basil

One thing I would have done before adding the crushed tomatoes at 4:28 would have been to add a cup of red wine and add the crushed tomatoes ONLY after most of the wine had evaporated on medium to high heat. Either way this was very informative for me and looks super delicious. Cheers.
