Use Plum Tomatoes if available.
Canned tomatoes are perfectly fine to use, given fresh are not always in season, and many good companies that make crushed, canned, or whole-canned, pick and can at the peek of ripeness in the first place. I've spoken with a few cooks in my time, who say if you have fresh on hand, or in season, go ahead, but there is -no- shame in canned when and if it is needed. Again, fresh isn't always available.
