One of my favourite tricks (on PS2, might work on other platforms): activate super bunny hop cheat, go up to a cyclist and knock them off and get on. Stay still and hold down the bunny hop button. Allow them to reach you and knock you off the bike, at the same time as they hit you, release the button. They go shooting up into the air and fall down and die. Funny shit.
