there is a place that uses cottage cheese along with paneer in theirs. it is very thick and creamy.. and delicious! have you heard of using that before? i tried but cannot make it the same. i think they add cream to it.

I was surprised by the addition of corn starch-- I've never used that in mutter paneer. Also, I use a TON of butter in it. As always, I enjoy watching Manjula cook!

Paneer cheese is easy to make. Get 4 pints of full cream milk and warm it up to nearly hot (not boiling) add 2 tablespoons of lemon juice (or one tblesoon of vinegar) and observe it curdling. Turn off the heat. Allow to cool. Drape a clean tea towel over a large bowl and drain. Tie up the tea towel and twist to compress the curd. Allow to set for a couple of hours. Then it's ready!
That is interesting... my girlfriend let it hang overnight and then pressed it for a few hours. We think it was not pressed with enough weight because it was too wet. You twist it which must get out a lot more of the whey!

Instead of adding water, I would add heavy cream without using corn starch. Otherwise, perfect.

Sugar helps counter the acidity of tomatos otherwise the dish could be sour

store baught paneer is very firm so you do not have to fry but home made paneer is not that firm so you must fry home made paneer.

yeah it's a typo. She meant pepper, as in spicy green chili. How spicy is up to you, just don't use anaheim :P

No, 1 pint is 2 cups, and 1 litre is about 4 cups.
So 4 pints is 8 cups which is about 2 litres.

it's actually powdered mango! it smells just like the fruit. the only place i could find it was at the Indian grocers... good luck!

If you go to any Indian grocer you'll find it's referred to as AMCHOOR or sometimes AMCHUR instead of Mango Powder. Great stuff!

"Paprika" is not hot like red chile powder. It is made from ground sweet red peppers, not hot red peppers. Easy to find in any supermarket.
