    let caramelise 3 table spoon of sugar in the pan, add 25g of butter.

    Take half lemon and with one fork stir the mix.

    Add the banana on a table spoon of rising. Flame with dark rum.

  • Why is the flame so big? Because you put the Grand Marinier while 1) Pot was still on the heat. 2) the sound was rumbling while it should simply sizzle a little, then set it on fire, you don't even need the heat on the bottom at that point.

  • Junior Sous in Chicago Steakhouse at GoldStrike Casino here. We use 151 liquor to flash it when we do out flambe. We do it table side in a pretty dark dining room so everyone loves it. AzNFudgeman you can flash oil if you want, but you'll get the burnt taste, I'd recommend using a liqour though as it will give a wonderful taste, southern comfort does really well too.

  • Yes, by using LESS THAN a soupspoon of oil instead of butter, heating the oil until a wisp of smoke comes out of it. Throw heated ingredients in and then strike and stir with tongs dipped in water. It's a grease fire, and you can keep it going as long as you keep moving ingredients quickly. For those who use too much oil for this: To quickly snuff an out of control fire, cover pan completely with a wet rag to keep oxygen out. Don't throw the rag at it. Cover it as if taping someone's mouth shut.
