This is a medley of "Simple Gifts" and "Dance Wherever You May Be". That's why you heard that "Quaker" melody in there. "Dance Wherever..." ("Lord. of the Dance") and "Simple Gifts" are two different songs, but they were combined in this lovely arrangement. :)
It says in the description "the Shaker hymn The Lord of the Dance"...
"The Lord of the Dance" isn't the Shaker hymn, "Simple Gifts" is. "The Lord of the Dance" is (among other things) an adaptation of "Simple Gifts".
(To Jagpore: And yes, they're both great. ^_^)
To profedward: Well, the Shakers probably wouldn't have been keen on Martha Graham's version, as the Shakers didn't believe in marriage (they didn't believe in physical/sexual love at all) (but...that's their problem ^_~).
And Martha Graham choreographed to it in the 1940's with her lighter emotional peice Appalacian Spring featuring Graham, Merce Cunningham as the Preacher man and Erick Hawkins as her joyful hubby....
I love these two songs most of all. Thanks to the Shakers.

Traditionally the pelican(!) has been a christian symbol because -in legend- it scratched its chest with it's beak to feed its young with its blood.
