I WILL be making this cake. WOW. When you frosted it, the layer was thin. When you served the cake, there was a LOT of frosting on top. Mine will be one of the "lots of frosting" variety. I'm thinking pecans instead of walnuts ... but the rest is on the money. Oh yeah.

@OccasionalVlogger You are so right! An English Wedding Cake (at least for William and Kate) IS a fruitcake. I usually am not a fan of fruitcake - HOWEVER - I must admit this was seriously one of the BEST cakes I've ever made. I was totally shocked! I blame the brandy :)

I am going to figure out the calories per slice and post them below the recipe on my site tomorrow! I really want to add flavor to recipes without all the unnecessary calories and guilt - so many more healthy but still fun foods to come!
