  • The dish was invented by Alfredo di Lelio at his restaurant Alfredo alla Scrofa in 1914 . For all you experts that say it is not an Italian dish.

    The orginal dish was made from two things Butter and Parmasean chese. He made it for his pregnant wife who was haveing a hard time keeping food down. He later added it to his menu.

  • @catlovergal Yes, you need to use fresh grated parmesan. Preservatives don't allow the cheese to melt properly and your sauce will come out lumpy

I don't mean to bastardize, but I only have fresh oregano and basil (Yes, I know, boo hoo), so I am going to use the whipping cream and not worry about the outcome because after watching the video, I know anything I make by accident (first timer) is going to be ten times better and cheaper than anything with GMO in the store.

  • Lemme say that, my friends. I'm italian and... well... this is not a traditional dish. Absolutely. We don't even use any sort of cream in any traditional recipe. Modern italian cuisine is getting derivated ingredients, like panna or besciamella, which comes from the north of Italy, but in any case they're not from the tradition. I'm not complaining about anything, i just say that when you say "traditional" you have to be careful to keep it traditional! Cheers from Dino, Italy ;-)

  • @BeaverCleavage1 sweetie, yr grandparents left Italy (and I am 99% sure that they were from the South) because back then people were starving in many places in Europe. To state that now Italy is a "rich" Country of course would be a lie, but definitely your question about yr ancestors is answered!

    Still the South is depressed compared to the North, but nowadays (apart from the worldwide crisis which affects EVERYBODY) the image of the Italian immigrant has disappeared.

You will find that in the US, the obese are far greater in number than the nonobese. I recently visited Europe and it isn't that way there. I noticed the people were much more active and healthy. They have diets that consist of healthier foods. Oh and by-the-way, there are obese people in all countries. Even Africa! But compared to us here in the US, they are anorexic.

Also There are states that are bigger than some countries in Europe so the US has far more people. Yes there are far to many fat people in the states but other countries have problems too.

  • @BeaverCleavage1 actually.. there is mostly only McDonalds in tourist areas. I have seen a Burger king here also. I am an American and have been living in Italy for 2 years. Americans stick out. Thats the truth. Italians are a lot more thinner than us. We have a fast food restaurant in every corner in the states. In Italy, no way. There is family owned restaurants. And most are only open at night. American serving sizes are a lot bigger than anywhere in the world. I have been all over Europe!

  • I end up throwing garlic into the sauce, but that's because I love garlic in everything. My biggest problem is getting the Parmesan cheese to melt thoroughly into the sauce. I have NEVER been able to get the cheese to melt thoroughly into the sauce in the amount of time demonstrated here. I want my sauce to be completely creamy, without solid cheese particles adding a graininess to the texture of my sauce.

  • @TenoreRobusto1347 The only solutions I've come up with are either bringing the butter and heavy cream to VERY HIGH heat before adding the cheese, or using something that melts a little more readily than parmesan, like mozzarella. (Of course, we're talking about crappy name brand cheeses here, I'm a poor college student.) Can anyone give me some help or ideas?

  • @TenoreRobusto1347 I actualy used mozzarella for alfredo sauce...now I don't know too much about cheeses, but the mozzarella I bought was very bitter, and its not good at all to put that in a sauce like this. Now I'm a student myself, and I can understand why parmesan isn't exactly as affordable.

  • Im curious, as to adjusting the ingredients for quantity. Lets say you are making 2 pounds of fettucini, how much cream, butter and cheese would you use?? I made this last night, but i got the feeling that it was just enough sauce for one dish.

  • For each pound of pasta I use this much.

    1 cup heavy cream

    4 tbs butter

    1/2- 3/4cup parmigiano reggiano

    1 tsp salt

    1/2 tsp pepper

    1 minced shallot (optional)

    I think im gonna try using cream cheese and parsley the next time I cook it.

    She also says to ditch the salt, maybe ill do that too.

  • this was a pretty good recipe....i added a yoke to the recipe and it turned out pretty good.

    Boil for 5 mins then add the cheese.
