Nothing bad in the peel (actually the dark stuff is good for you) but when it's cooked, unless you cook it really well the skin can be tough. Also, that is a big eggplant, the bigger they are the tougher. You can leave it on if you bake it, it should be fine then you don't miss out on the nutrients.
@dudeman1109 you need to peel the eggplant because it's coded with wax to preserve it from damaging since it comes from oversea. The same thing goes with cucumber, tomatoes, apples, pears etc.

I made this recipe for the first time after viewing this video. It was delicious! The only thing I did differently was I used Panko bread crumbs instead of regular. I like the crunchiness of them and I think they are more healthy. I also broiled them for about 4 mins on each side so they really crisped up.

Depends on the eggplant. Strains, and age, and growing conditions can all impact the flavour.
What you should try salting with to compare is with the little green golf ball sized Thai eggplants. I find them inedible when not salted first for being as bitter as they are. Nice when cooked stuffed though :D

Great healthy recipe! For people who love garlic, add some fresh garlic to the bread crumb mixture. It gives the eggplant parmesan a lot of flavor.

I don't know...I tried it and the baking is not as good as the frying. The eggplant didn't get all mushy inside like when u fry it.

You can use any combo of egg you want... egg substitute works or a regular egg or just the white....

I heard the same thing, and for years I salted it and put heavy weights on it to rid the eggplant of bitter flavor.
I recently heard that they have altered the eggplants genetics to be LESS bitter. I think its true, since I dont salt them and they taste great!
