  • Not too bad but don't peel the skin off the eggplant. The skin carries the most important nutrients and check out Dr. Oz site for the benefits of eggplant - helps to make you younger.

  • I made the parmesan eggplant this evening on April 3rd. I think I might try the italian bread crumbs instead of the plain breadcrumbs next time. I used Prego sauce since I was in a hurry. It was very easy and very delicious. Thanks for sharing Steve!

  • looks awesome but you need better lighting in your kitchen dude, i will try this recipe tho =) am growing eggplants and trying to find some good recipes for them, if you could do a vid for pickled eggplant with olive oil that would be great! most of the recipes ive seen are basically the same and seems a healthy treat, and not the ones that come out like mush, but the one where you actually use a jar like a for pickling stoof :p

  • Check this out: I've not ever eaten eggplant in my 35 years of life; my girlfriend has. We both just recently became ovalacto vegetarians a little over 2 months ago and we were looking for some recipes for eggplant use. Yours was the second on the list and we clicked on your site. This was roughly about 2 1/2 - 3 weeks ago to this day, and man, let me tell you----I AM HOOKED!!!!! Thanx for the recipe, Steve. In fact, we'll be having this for tonight's dinner.

  • Very Nice! I want to make this, but why do You peel the eggplant, is there anything bad in it???

  • Nothing bad in the peel (actually the dark stuff is good for you) but when it's cooked, unless you cook it really well the skin can be tough. Also, that is a big eggplant, the bigger they are the tougher. You can leave it on if you bake it, it should be fine then you don't miss out on the nutrients.

  • @dudeman1109 you need to peel the eggplant because it's coded with wax to preserve it from damaging since it comes from oversea. The same thing goes with cucumber, tomatoes, apples, pears etc.

  • Great healthy recipe! For people who love garlic, add some fresh garlic to the bread crumb mixture. It gives the eggplant parmesan a lot of flavor.

  • I've never made anything with eggplant so hope this is a good recipe.  Otherwise I'm never eating the stuff again. I wish the camera would have been aimed a little lower when you were putting it together in the pan. Other than that this was really helpful.

  • I don't know...I tried it and the baking is not as good as the frying. The eggplant didn't get all mushy inside like when u fry it.

  • I made this recipe for the first time after viewing this video. It was delicious! The only thing I did differently was I used Panko bread crumbs instead of regular. I like the crunchiness of them and I think they are more healthy. I also broiled them for about 4 mins on each side so they really crisped up.

  • Havn't made eggplant parm in a long time. I can't wait to make it after whatching your vid. The only thing I might do differently is spread a little olive oil on the pan and brush a little on top of each piece.

  • Hey thanks for the comments....!!! THE EGG was indeed a "ful" egg -- both the white and yellow. But you can use an egg substitute too!

    I rarely fry anything in oil (submersed) due to the high calorie, fat and heart attack issues!!! I often sear the outsides of a food, in a frying pan, with non-fat cooking spray. Then continue cooking the item by baking it in the oven.

    TRY the eggplant, its delicious!!

  • Ok, first of all you think he could have at least done this if not shirtless than in a wifebeater or tank top!! Topup, use full egg..it's the yolk that makes it adhere to the eggplant. As for squash and okra..I love them too. You might try oven-"frying" them the way Steve cooked the eggplant. Of course though far healthier, they just aren't as good..!!

    I have never had eggplant, but gonna give this a shot! Question for you though: When you dip the eggplant in the egg...is it a full egg or is it just the egg white?

    And if you are taking requests...do you have anything for fried okra or fried squash? Love both of them, but are fried in a lot of oil!

  • You can use any combo of egg you want... egg substitute works or a regular egg or just the white....

  • I heard the same thing, and for years I salted it and put heavy weights on it to rid the eggplant of bitter flavor.

    I recently heard that they have altered the eggplants genetics to be LESS bitter. I think its true, since I dont salt them and they taste great!

  • I always thought you salted the eggplant to take some of the moisture away to make it easier to cook.

  • Depends on the eggplant. Strains, and age, and growing conditions can all impact the flavour.

    What you should try salting with to compare is with the little green golf ball sized Thai eggplants. I find them inedible when not salted first for being as bitter as they are. Nice when cooked stuffed though :D
