  • Oh Man! I'm Palestinian and my mom made this so often, I grew tired of it. I used to put yogurt (laban) on the rice, it was good. It doesn't matter what the occasion is, graduation- MAQLOOBEH, relative coming to visit- MAQLOOBEH, family getting together- MAQLOOBEH.

    Typically, Palestinians choose to make Either Makloobet Zahra (Cauliflower) or Makloobet Betenjaan (Eggplant) but I've never seen both ingredients mixed together.

  • You can use basmathi rice. Its sold in most of the grocery stores in Asia esp run by Indian.

  • well asian rice can be very sticky, like the jasmine rice, u can use any type of rice u like as long as its not sticky, the rice is preferred to be fluffy in most arabic recipes, but if not available i guess u can use whatever u have.

  • @kertzey sorry about the sarcasim.but i'm lebanese and asian rice will work but you wont get the same results.asian rice is vry sticky so everything might clump up on you.for best results use good quality basmati rice.

  • Very good! I sometimes replace some of the spices with some "Maggie" I think for chicken or Lamb its the best, its got half of the spices needed to give it the flavor!

  • Thank you for the reply. I will make this with chicken like yours first and then I will try beef. The dish I had was thick with mouth sized pieces of beef, the sauce was like stew and yes I'm sure it contained spinish also, as I asked my friend and his mother made this dish alo when he was little. I wish the rest. was still there I'd go and ask what it was called. It was a very small place with only 4 tables. Thank you bintkan3an :)

  • this looks fairly easy and delicious.. i was looking for dish made with spinich and beef. I had it before with friend from Jordan at a middle east rest. it was thick like stew and served with rice , and sweet tea of course. thanks for showing how to make this yummy dish!

  • are you sure it was spinach?? i have a video for a recipe made with Mulokheya (Corchorus) check it out its probably the same. i made it with chicken though.

  • its not only about the chicken, its about the whole dish, the chicken is just one of the ingredients that make this dish yummy, but its the concept of the way this dish is cooked, with the ingredients in it! hope u give it a try when u have the time.

  • you can use any part of the chicken u like, the main thing is to use the chicken stock from the chicken, u can also choose to add beef or lamb instead of chicken which will turn out even better tasting. thanks for ur comment.

  • u have too much eggplant and cauliflower in your maqlooba. it would taste better if you put less of those ingredients. i put more baby carrots than cauliflower or eggplant in my maqlooba

  • when it comes to the amount of veggies added, what to put less of or more of, is more of a personal preference, some people don't add eggplants at all, which is totally fine. thank you for the comment!

  • to reheat it after its done cooking u mean???

    yeah u can scoop some in a microwave and heat it, or put it in an oven safe dish, cover it with foil and heat in the oven, or u can leave it in the pot, add half a cup water, and heat it on medium low heat. for smaller portions, microwave is best, for larger portions, the other two ways are better. hope that answers ur question!

  • 1st time cook of arabic...it was ok...couldnt find 7spicen *WHAT/WHERE IS IT ,WHERE CAN I FIND IT? ill use stock instead of water next time and a touch more spice to give the flavor abit more punch...ill definately cook it again...i had it with yoghurt and tomato salad and lebanese bread...they were great for the sides..thx for that

  • wow im glad you tried it, but im sure ill turn out way better if you use the stock because all the spices are in it or most of them, and with the chicken flavor in it, it gives the whole dish a better taste than if you just use water, so using the chicken stock is key.. seven spice is available at middle eastern grocery stores. if u do not find it, make sure u use everything else. hope you try it again. and let me know. =D.
