  • @joe18370 The final portions are one pound each. though recently when I opened a new location I switched to 1 lb. 2 oz.

  • such an awesome video. your dough looks soooooo smooth compared to any other video i've seen on youtube, from "experts" showing how to make dough. i have yet to figure out how to make the dough so smooth though. even after 10 minutes of kneading, or seeing people use KitchAid mixers, their dough still looks non smooth,

  • @cancash1 the product you see me weighing out is a dried rye sourdough bread. It does not contribute much to leavening the dough. however I do add both a sourdough starter and as you see in the vid some dried bakers yeast. Though we could rely solely on the sourdough culture; the yeast allows us to speed up the process slightly. I recommend going to a local bakery and asking them for a little bit of starter and if you have the time, make your pizza dough from that. cheers.

  • my recipe is usually about 80 lbs of dough, we do use a multigrain crust at the farmer's market
