such an awesome video. your dough looks soooooo smooth compared to any other video i've seen on youtube, from "experts" showing how to make dough. i have yet to figure out how to make the dough so smooth though. even after 10 minutes of kneading, or seeing people use KitchAid mixers, their dough still looks non smooth,
@cancash1 the product you see me weighing out is a dried rye sourdough bread. It does not contribute much to leavening the dough. however I do add both a sourdough starter and as you see in the vid some dried bakers yeast. Though we could rely solely on the sourdough culture; the yeast allows us to speed up the process slightly. I recommend going to a local bakery and asking them for a little bit of starter and if you have the time, make your pizza dough from that. cheers.
The part where you lift the dough and say "Take your legs completely out of the equation......focus all the weight in your back and groin and lift with a sharp jerking motion." is hilarious. Sounds like you are a big family guy fan too! Great video.
You use a Hobart mixer, where the hell were the safety cage they can rip your arm off in a second.

my recipe is usually about 80 lbs of dough, we do use a multigrain crust at the farmer's market

I've been adding some flax seed flour in mine. And it tastes awsome!!! I'm posting a vid of it soon. But you might have to double the recipe LOL!!
