Sawyer was originally supposed to be city gangster type character. If you listen closely to the dialogue you can easily tell how different the character is. They changed the character to fit Josh Holloway better, so it's a bit unfair to say Matthew Fox would have been bad. He just isn't "Sawyer" because "Sawyer" was specifically fitted to Josh Holloway.

Matthew Fox's Sawyer is too wound up for me. There's a sort of nervousness to his acting that works brilliantly for Jack, but would have made Sawyer come off slightly crazy; I think I would have felt a bit exhausted after six seasons of him as Sawyer.

Here´s what´s interesting:

As a psychologist I can sense that he´s acting a lot here. When he plays Jack, he´s not really acting that much. He just IS more like Jack.

Holloway on the other hand is the nicest guy ever on the planet. Almost a little dorky and feminine here and there. And still: He doesn´t have to act very much to be believable as a total badass.

I think that´s pretty interesting.
