Because the way I've heard it "Ermac" was actually a bug that resulted from overplaying either scorpion or sub-zero. It would make the game glitch and change the pallette to red.

Ermac actually stands for "Error macro", which the game displayed on the name.

in previous game consoles they only had so much memory to make characters...so they just changed the color of the character and changed fatalities....so now that they have more memory and the technology is more advanced they can make them individually unique!
