Fish slime is actually is a reaction via subcutaneous cells known as club-cells. When these cells are ruptured there is an alert chemical released into the water that puts all other holding fish into a state of alarm. Nets are notorious for making the vast majority of slime and destroying scales ripped from fish as anglers attempt to land them. Wool gloves are soft, supple, and hold water necessary for keeping scales intact; a moot point if you intend to keep the fish.
