@dewittbros well just make sure you put a pan or foil in the bottom of the oven to catch drippings.. also i borrow my buddy's cabelas meat slicer. it gets the meat razor thin. you could try one of those... but those thick slices look delicious too

They would of fashioned a weapon out of it!! I use a pan to apply my spices then lay the meat after its cured on the rows of my oven grill. I think we've learned something here..If you keep your meat true..you can lay it wherever you want.
I have heard that in order to avoid getting E-coli or the like you need to freeze wild game or pork for 30 days at 0 deg F to kill any possible funk that could be in the meat. Do you practice this? I am new to making jerky and just want to be safe.

or cure it. Freezing wont really do anything.

You need to let the meat age for about a week in temps that are below 50 and above 32 to let the rigor mortis relax and the meat to start breaking itself down so it will be tender. Then cut it up into nice thin steaks, pieces for hamburger or jerky and roasts.
Stick it in the freezer wrapped in cellophane then tinfoil then freezer paper and keep it alloooooong time!

You can do this with any cut!
The cut im using is the tenderloin because its so soft.
Some folks say its a waste of a good cut but i guess i don't care:)

I dont have a shotgun or a hp rifle.
I really enjoy being up-close and personal with the deer.
Watching them interact with one another is such a cool experience.
When they get so close and they are all around you and your heart is going crazy is what i love!
They are such wonderful animals
I like hunting with a bow because it forces me to be a better hunter.
Its not that tough to line up a scope at 75 yrds and pull the trigger.
If my family was starving though, i wouldn't care what I used!

The directions actually call for only 1 1/2 tsp. of the seasoning mix ... NOT 2 tsp.
Also, never lay the meat on a pan. A stainless rack is needed. Kinda entertaining though.

Its all good, but the best and most tender are the back-straps. The two long pieces right beside the vertebra on top of the animal.
Just start hackin in to that sucker and get the cleanest cuts you can....take your time.....the meat will naturally come apart with the silver lining.

I live in Iowa.......You can hunt deer all winter Oct1st - January30 depending on what weapon season it is. I only hunt with a bow.
If you are starving and need to survive ......hunt whenever you want......I made this video last year
