Sure sea salt might have a few more minerals but any difference in the amount of sodium is tiny if any. He is using a lot of salt, he is a classically trained chef, find one who doesn't!
@CanadaDan7 Amazing - so good I make it regularly, now. Not a big dill fan, so I cut back on dill and sometimes add more thyme. I've also tried this recipe with regular sole (bad idea - tastes bland) and Dover Sole (same taste as Lemon Sole). Lemon sole all the way.
Also use heirloom carrots (white, yellow, orange) and the flavour and colour contrasts are amazing - very attractive on the plate.
Serve it, God dammit!

@crimsoninred it's sea salt which has less sodium in it than the regular kitchen salt.

so i made this last night - protip - slice the carrots VERY THIN or they will still be firm 20 minutes later, when the fish & other veg are done.
added sauvignon blanc as the white wine he calls for. although horrible to drink, sauv blanc is great to bake with!
