Years ago the musical guest would sit down with the host as an actual guest and sing 2 or 3 songs. Most people refer "Godfather" to the movie "The Godfather" made in 1972, which covers up it's original meaning.
A godfather is someone that will replace your real father when he dies in a accident for example.
In this context, calling him "Godfather of Soul" is absolutely right and true
