Hello Betty. I tried your beef vegetable soup. It turned out very good. I added a can of stewed tomatos, ground beef, and elbow macaroni. It turned out to be more soup than I thought at first. I ended up with 2 good size pots of soup. I'll freeze some of it. Thanks for the recipe and instructuions.

@Diligence3026 Hi Saphire, Yes, you definitely can use feshly chopped vegetables in place of the frozen vegetable; I just used the frozen ones for convenience. If you will do a search for fat free gravy, then you will probably see a demonstration of using a fat separater.
@MrFluffy7140 You can just spoon off fat that comes to the top. If the meat you cook is appropriate, you can pour off the grease into a cup that has a lid with holes in it and a spout. Then pour off the fat, discard it, and return the stock back to your recipe.
hy betty, just wanted to drop a line to you and say how much i liked your vid. i recintly decided to try my hand at soup in a crock pot. i did a chicken soup and it was o.k. but the meat turned to mush( crock pot left overs). my 2nd was a beef much like yours but with a meripua and potatos. and a londone broil i did for dinner.i turnd out much better. thanks for the tips on some spices touse. would a bay leaf work in thee as well.

Hi Betty, Amatur here. When you simmer the beef for 3 hours.. Did you take it to boiling first and then simmer for 3 hours? .... and did you stir at all? Some people stir, some like to let it sit in place.
@corwinstormvxv Yes, I bring it to a boil over medium heat, then reduce the heat to low and simmer for 3 hours. 3 hours is just an approximation; just stir it occasionally, and check for doneness around about 3 hours.
I would have added the water at the beginning, but I was just reserving judgment as to how much water to add. Either way, it need to cook a long time to make the beef tender. It's the steam that boils away, and the flavors condense into the soup.

Yes, that would be fine; however, the beef is cooked in 3 quarts of water, which reduces down to a very small amount of concentrated stock. And then I added 6 cups of water after the vegetables were added. The beef stock is not really needed.

Frozen veggies sure would be convenient. . .but I figure I might as well have some fun washing and chopping if I've got to cook my meat for 3 hours anyhow. LOL. Actually, I would rather make my own choice about the veggies, since I'm not crazy about the typical corn, peas and green beans thing.
Sorry you're missing out on our lovely snow! Regarding the vegetables for the soup, fresh is best, and you get to pick what you want! With the frozen or canned, you just get a typical mix! Thanks for commenting!

We don't have snow that often down here in my area. I am just about an hour or a little better below the mountains. Usually we wind up having ice storms more than snow. Last year on March 1st we had around 8" of snow. It was beautiful.

Snow is blanketing most of our country, even down south! The soup kept us warm yesterday, and we had the rest of it today! It is really nice to have food like that cooking in the kitchen when it is so cold and dreary outside!
Another great recipe. This just may be my favorite so far. I love soup. A freind gave us one of those soup Gift baskets for Christmas that had all these things associated with soup, including a new set of soup mugs. This is a good change to try them out. Keep warm. I'm sorry you have the flu, along with all the snow and cold! You could make this soup vegetarian, by leaving out the meat and replacing it by potatoes cooked in vegetable stock. It will still be a very flavorful soup!

I'm also in the Dallas area, isn't this weather horrible? I hate the cold. Betty's soup is perfect for these dreary days, I'm going to make it in the crock pot, sit around in a bad mood and wish for spring to hurry up and get here!
This is great for the crock pot; however, you won't need as much water. You can just put all of the other items in, and then put an amount of water that looks appropriate for the final look, and sit back and let it cook! And, when you start smelling the aroma of the soup, you may just come out of that bad mood the weather put you in! Thanks for writing, and for the crock pot tip!

Looks so good! Something that is a nice addition to homemade vegetable soup is white rice, you should try it sometime. :)

You need a wireless lapel microphone becuase the sound is hollow and echoee. A mic will really step up your production to the next level.
PartsExpress has a wireless system for $15. Check it out. If you like it replace the mic that it comes with for even better sound.
You should also look into being partner as you're pretty much garunteed acceptance.
You could make a few hundred dollars a month just from being partner which could help pay monthly for a renovation or a new car.

Just a small tip for your cutting board. Put underneath a wet paper towel or just a regular kitchen towel.
The cutting board will not move or slip around while chopping.

I liked it at first, for the seasonal event - but now it's gone to faar :( I have the flu and the snow is deep in Oldham so today we did all of our shopping ( quite alot of itams ) - So i hope you can make something warm which will be sutibles for vegetarians! thanks :)

I'm sorry you have the flu, along with all the snow and cold! You could make this soup vegetarian, by leaving out the meat and replacing it by potatoes cooked in vegetable stock. It will still be a very flavorful soup!

6 inches is what most of Kentucky got; we got off easy with only about 2 inches, and today we're getting just a small amount of snow! But, I always turn to cooking to raise my spirits, and it usually works!

I'm also in the Dallas area, isn't this weather horrible? I hate the cold. Betty's soup is perfect for these dreary days, I'm going to make it in the crock pot, sit around in a bad mood and wish for spring to hurry up and get here!

This is great for the crock pot; however, you won't need as much water. You can just put all of the other items in, and then put an amount of water that looks appropriate for the final look, and sit back and let it cook! And, when you start smelling the aroma of the soup, you may just come out of that bad mood the weather put you in! Thanks for writing, and for the crock pot tip!

would you advice using a pressure cooker to cut the cooking time from 3 hours to 20 minutes??

A pressure cooker would be fine--you won't need all that water, so be careful to adapt the recipe accordingly.
