i regularly take a good 30 minutes to finish one 12 oz cup of coffee. the flavors change soooo much depending on the temperature.
I am a scientist and I've done this tasting experiment double blind on multiple other coffee geeks. *No one* has yet been able to tell the difference in a real double-blind controlled tasting study. In fact, they can't reliably tell the difference between a $20 electric coffee maker and the Chemex and the Hario filter.
@Bademester the testing was administrated by baristas from Stumptown coffee and I personally drink coffee made from either a Hario or a CleverDripper. The experiment was designed to answer the question: "can coffee aficionados reliably tell the difference between one of three methods when they are prepped by a professional?" The answer was 'no'.
Freshly ground beans, water temperature, and extraction time matter. The effect size of the other variables on taste is in dispute.
I hate coffee analism, but I must throw a spanner in the works. The chemex was better because it had cooled for 5 mins. You need to make both cups at the same time! P.s. I love that kettle - what is it? P.p.s thanks for the videos :)

@SeattleCoffeeGear I find that coffee tastes change and develop as they cool. If you do decide to do it again (even off camera) I'd be interested to know the results!
@cqinno Definitely do, but the first cup was still relatively hot. :) It is difficult for us to do things in tandem on film as I can't really take tons of people off their actual jobs at one time ;) So you'll have to live with our current approach, sorry! - Kat
So you guys finally got the new hotness in?! Great to hear. Bonavita really are the new standard in terms of kettles and machines (based on pricing). On the Chemex tip, Mr. Thom of Sweet Maria's says the V02 Filters are superior because of their thinness and lack of paper coffee taste. The Chemex filters require a large amount of water waste to wash out the terrible paper flavor.
@thePowerPlant Yes, we are digging the Bonavita!! Yeah, everyone's got their own opinion on everything in coffee ;) Which is something I both love and hate about it! I think both produced a great cup so I guess it does come down to some of those finer points as far as which is better, personally, for you. - Kat
Glad you guys did this video. BTW, the side with the 3 layers face the spout as it won't fold into the spout and will not restrict extraction/flow due to circular happiness.
One thing you should have done is to rinse out the filters and just taste the water to see which one give more paper taste or just which one tastes better.
@SeattleCoffeeGear ;) If you make the grind a bit finer for the Hario filter and maybe also a bit coarser for the Chemex filter I think you would have similar results only different flavor from the actual material in the filters.
oh and allison, if you care, i tend to find i have more control over the flow of the water with these types of spouts when i use both hands.
i'll hold the handle with one(obviously) and the other i'd put it on the plastic top. helps you to control the tilt of the kettle while pouring.

I am NOT a scientist and couldn't care less about double blind testing or other snooty testing methods...
On the other hand I *CAN* tell the difference between coffee from a cheapo $20 coffee maker and my Chemex. Hands down...
Thanks for the comparison testing as I've often wondered if the Chemex filters were worth the cost and hassle of having to order them.
