When I first got introduced to Opinels (many years ago). I was told that the number 13 was used by French abatoir workers for butchering the carcases of slaughtered animals. Being stainless, they were easier to clean after use, not too heavy but big enough to use with both hands. Seems perfectly plausible to me.
