@jhobbs1824 , i have never tried this method to "roast" eggplants in the microwave oven. but you can try it. i hope it works out for you. My guess is that you will not have this nice smoky roasted taste of the eggplants, it will be as if it was boiled, kind of flavorless. I suggest that you put it in a covered pot on the stove top and cook on high heat, the pot will act like an oven and the eggplants will be roasted. should take no longer than 30 min.

Eggplants have lots of water naturally and if you boil them they will have lots of it and it won't be so easy to get rid of. i suggest that you put slits in your eggplant and put it in a pot with the cover on, place on your stove top with the heat on high, this way you will create a small oven and the eggplant will be roasted, it should take about half an hour but make sure to turn the eggplant to get even roasting. good luck!

anyway, you can add half of the amount of tahini that i listed in the ingredients here...adding yogurt to it "breaks" the strong sesame taste too. also adding lemon juice or vinegar gives the tahini a nice taste...some people add pomegranate molasses to it instead of lemon juice or vinegar...try it and i hope it works out for you.

I agree with thawan. 2 cloves of garlic will
make this taste like a million bucks. Walaw,
shewayet toom. I also add some coriander powder and some paprika. Lebanse dishes are the best.

I put a little tahini in my hummus and it was a really strong sesame flavor. Isn't the tahini overwhelming the eggplant?
