I'm okay with what they're doing. Just want to point out that the fish is NOT dead. It's not spasm. The chef didn't touch its head;therefore, nothing around the heart or brain is damaged. The arteries and nerves are still in one piece on the fish's body due to the chef's amazing slicing skill. It's just the flesh are off..that's all.
