Actually NH3 just has such a high solubility, that it dissolves in the water, creating a lower pressure, because of the volume reduction.

Hence our atmosphere presses the water up the hose, into the flask with the NH3-gas in it, to equalize the pressure.

Idk about the luminescence, it is not really related, it was achieved by other means.

Mixing amonia and bleach doesn't make musterd gas it makes chlorine gas, which will also kill you although not as fast.
