@poisonrage most traditional wedding cakes (fruit cakes) are covered in both marzipan and fondant for taste and texture. For such a heavy cake the combination is ideal :D.
I am currently stationed in Germany, the way cakes and such are made here are nothing like they are in the US. Culture is amazing. I love this cake wonderful job Sue.
could some please help me...im new to making fondant cake, i tried using buttercream then fondant in the cupcakes i made for my nice, but it ended up being so moist that the fondant really soften...whats the best way to avoid this?
@MissMovie2 nope, marzipan is a sugar/almond paste and is so much tastier than fondant. I don't use any fondant at all on my cakes. Marzipan is great to work with (except for taller figurines b/c it won't harden out as much as fondant does) and the tast is great.
@MissMovie2 You can use either. It's a matter of tast and I like marzipan much more. Both I would never do, just one thin layer of marzipan of fondant is sweet enough (and then in Holland we use biscuit (probably doesn't translate ;-)) for these cakes which is less sweet and heavy than regular or pound cake)
My cakes: biscuit base, two layers of filling (usually strawberry jam) covered with a thin layer of buttercreme (just enough to smooth it out) and a thin layer of marzipan. :-)
@MissMovie2 Oh yeah, real dutch girl typing this :-) And we're right smack in the middle of the marzipan season by the way with Saint Nicolas being in the country :-)

@MrEddieswife hope this isnt too late, but fondant is the same the thing as sugarpaste so it makes no difference as to which one you will make, the easiest way to make it is to just buy it premade lol :)
@nefertiti272 I would do a crumb coat with buttercream to seal in all the crumbs and give a nice smooth surface to the cake and then put the fondant on top of that.
@poisonrage is you watch the first segment on how to cover a cake with marzipan, you will see she covers a fruit cake, marzipan and fondant is just the tradtional way to cover a fruit cake, i do agree the icing could have been rolled thinner, but marzipan really isnt all that sweet so its not a huge sugar over kill when fruit cake is served as weeny little slices you only get a little bit of it the icing
i hate to say this but i most comment on her finger nails
they are so tall
she seems clean she is clean but tall nails are not a good look for a cook

Marzipan AND fondant? That's a bit much, isn't it? Especially when that fondant is so thick!

@poisonrage that's the standard thing actually. The marzipan seals in the moisture of the cake whilst the fondant adds the decorations.
