Well first of all I'm Jewish.....and a lot of my friends have Stein names as well. It can go either way like in "Einstein" or how Lisa pronounces it "Edelsteen" it all depends on dialect and how you pronounce it. It doesn't really matter, but that's how hers is pronounced. =]
