at 0:43 it looks like the boards were prevously broken or were cut accross them so they would be eaiser to break. Please correct me if im wrong. Also, whats the thickness of the boards?

Master Whitlow does not pre-break his boards! So yes you are wrong! The boards are pondarosa pine NO. 2 or 3.
