  • Why not use clarified butter???? Much easier

  • Professional chefs don't waste time with a water bath and whisking for 15 minutes. You can move a regular heavy bottom pan on and off the heat and make the sauce in about 2-3 minutes. You just have to have a feel for when it is getting too hot. Watch for steam coming off of the sauce.
