WTF!!! The bridge being replaced. It's the saddle. Your not supposed to take all the strings off at once otherwise the neck could shift. The guy doesn't even support the neck when it is having a string change. FFS!, I wouldn't trust him to touch any of my guitars.
True, it's not the bridge but the saddle. Aaand it's actually not bad to take of all the strings at once. It's what you do if you have to work on the fretboard. You know, condition it, clean it properly, or if you need to work on the frets.
Also, the neck won't shift. It will bend a little because of the thruss rod. Just don't leave the guitar without tension on it for a very long while.
I was an authorized Fender tech for 33 years....I noticed alot of brand new guitars , right from the factory with very "dry" looking bridges and fretboards. A good oiling does wonders for the look and the life of the instrument.
