  • REAL BBQ cooks do not wrap up raw ribs in tin foil. Why would you do this? Meat absorbs smoke (flavor) when raw. Therefore, you do NOT cook them in your OVEN, then put on a grill for a few minutes.

    Most competition cooks put the raw ribs on the grill (with no foil) for 3 hours, then foil for 1 hour (with some butter and brown sugar), then no foil for 1 hour. It's called the 3-1-1 method and it's the BOMB.

    You can't screw up ribs if you follow this method (and keep your temp at 225-250).

  • I'm with sjm6219. I don't know how this can be called a "healthy recipe." What's the point of even using a thermometer when you open the oven door and contaminate your hands with the raw meat you had on your hands a few hours before? I couldn't believe it when you opened the aluminum foil box and the cabinet doors and spice can with raw meat on your hands. It's one thing to skip washing your hands in the interest of time for the video, but those things could have been laid out ahead of time.

  • You are observing a cross contamination issue here. You can't just toss around raw meat and slop meat about the counter top, grab kitchen cabinets with bare hands impunity and touch the spice containers with bare meat hands. I am sure the cooked ribs are good, no doubt about that, but what about the unsterilized surfaces. This is how people get sick. Learn about micro biology before you cook. Be smart in the kitchen and be safe.
