Unfortunately, I don't know of any FOSS suitable for recording windows games.
If this worked flawlessly under WINE, I'd say recordmydesktop, but since for the time being we're stuck with Windows, we're mostly stuck with FRAPS (proprietary).
You can give camstudio a try if your rig can handle the workload.
I also just found out about taksi, but never used it. You're welcome to tell me how it works if you give it a try.

Use fraps. I use it for mine and all my videos turn out quite smooth. But maybe it depends on your com specs too.
