Northen Italy is full of instant polenta. I live here. If I recall the book said that the Chef gave a murdering gaze to anyone who even looked at instant polenta pack. "You do this on purpose to me, you want of to looze a star!" Ie. no they won't use instant polenta on daily basis.
I think that he did NO FAVOURS to Batali, especially Babbo. I will not eat there again knowing that when things go wrong in the kitchen that they are sent out anyway. More than anything else in the book I got the feeling that Babbo has little to no standards. Instant polenta, pasta water FULL of ingredients from everything on the menu, poorly cooked meat. Sad really. Overpriced crap.
