What people dont realise is that Uncle Jun was showing early signs of his dementia (later on in Sopranos) and therefore he didnt remember what he was saying- thats why he was always repeating himself and Tony gets pissed off cos he doesnt understand why he keeps saying it lol.

Even the very last scene between him and Tony when he doesn't even remember shooting him, however the look on his face, you just don't know. Junior was one of the most complext characters on the show.
