I like to drain the water to get rid of the gas. I use fresh water without the gas.

Good video. I use canned peas sometimes but you can't cook them much as they are cooked already. In addition to what you have done, I usually add a little tomato ketchup, thyme and a little butter. We have done so for generations.

u can also add a whole scotch bonnet pepper to the mix when u add the scallion for a more traditional flavor

Thank you very much. The idea of using sugar came from my cousin, Toni. Her Rice n' Peas always tasted so very good. She finally told me her secret.
thanks for the variation. Now I know two ways. One with the can (shhh don't tell anybody) and one the traditional way.
