  • The flavour that is missing is probably corn, a cheap adjunct Canadian breweries add to their beer.

  • i added priming sugar (corn sugar) to my first brew but it still lacked a certain qualility. it may be the yeast or the malt with the off flavor

  • Corn sugar (dextrose) isn't the same thing as corn. Dextrose is a simple sugar that will not impart any flavours (desired or otherwise), and will thin the body of the beer. Try using 1KG of dried spray malt or use two cans instead of one. To get a little more complexity, try mixing two different styles, say Lager and Draught, or Draught and Real Ale etc. Also, consider changing the yeast from that Coopers yeast (it's very fruity). Give Nottingham or Safale S-04 a try.

  • No problem. If you are going after a clean tasting lager type beer, I would go with the Danstar Nottingham yeast. I've heard Safale S-05 is quite good as well (the S-04 can be a little fruity). The Nottingham is great for winter brewing because it is pretty tolerant to low temps (54F). I wouldn't go above 71F with it though.

  • @DarkSanctuaryBBS Yep totally agree with you. I think that 2 cans would be better and that the one thing (and the most important in fact) that ppl overlook is the quality of the yeast is paramount.

    The malt extract will add a nice touch also and will aid head retention.

  • i have a true brew kit and made coopers mexican cerveza. no probem during fermentation but did have some lacking qualities. was told to add dry malt extract to my coopers dark ale to add body one more week and i'll find out. this will be my second homebrew and i too will be moving on to all grain brewing. good luck!

    I'm taking Craigtubes advice and I got some dry malt extract that I'm going to use in the stout. I hope that fixes that gap.
