    PUDDING

    make about 2 cups of pudding. Depending on the country in which you live you can buy a package of pudding mix, buy Byrd's pudding mix, or make a cornstarch, milk, sugar and vanilla mixture. Whatever type of pudding you select, be sure to let it cool to just warm before assembly. IF the pudding is too hot it will cook the bananas and that is NOT delicious! (This is about the only problem you might have)

    Crush crumbs of either ginger cookies (favorite-speculaas) or Graham Crackers with a bit of sugar added. Melt 1/4-1/2 cup butter,pour over the crumbs to moisten. Press the crumb/butter mixture into a pie pan or a spring form pan (see video). Save crumbs to decorate the top of the pie. Bake it in a moderately hot oven in 10 minutes. Remove and cool.Alternative is to bake a pastry shell or a commercial pie crust. Best crust is one made out of either ginger cookies,or other crisp cookie.

    ASSEMBLY

    When the crust and the pudding are cool, spread about 1/4 of the pudding in the bottom of the crust. Slice as many bananas as you like over the thin layer of pudding. Continue to layer the pudding and bananas until the pan is full and you are out of pudding and bananas.

    Whip some heavy cream and spread it over the entire pie. Decorate the top of your pie. I used ginger balls preserved in syrup (delicious!!but not available all over the world)

    If you are using bananas on top, coat them with the syrup to avoid them turning brown (not pretty) Refrigerate the pie for several hours and serve cold. If you have used a spring form pan, unmold it by removing the outer rim of the pan before cutting. For a slanted (american type) pyrex pie plate, just serve it from the pan.

  • OH Great idea I just realised you were using the sweet spice biscuits you guys love in the netherlands... I love those biscuits with coffee... Yeah i gotta use those next time I make a cheesecake or this banana pie. Thanks for the tip!
