why does he hold the lefthand fork instead of the handlebar. is it to stop a speed wobble or larking about.

The idea is that it reduces wind resistance... You can see old speedway racers do it too (the right hand is needed to hold the throttle open) :-)

i believe thats a very old racing technique used to cut down wind resistance. cant remember where i heard that though

My guess 115-25mph if lucky Buell has a record around 126 or something. Rider needs to grab the fork higher though between yokes LOL! hate to hit a bump while gripping the slider like that for all you kids watching. Nice bike,
