  • Emeril appears to be a loving and caring man. I must object when he calls food with ingredients from animals or dairy Green. Sorry man, you need to take it up a notch and reserve your Emeril Green Recipes for vegan dishes.

  • @JKTate... actually, file is what cajuns use to thicken a dish. creoles use okra.

  • I make my roux with clarified butter (ghee) and potato flour, stir on medium heat constantly until a caramel colour. It always works for me, and it is gluten free as well.

  • ah all i can say is keep trying. for the roux try not too cook it really long. that's what makes it taste burnt sometimes. and add a little oil to it can help. :)
