I make the same thing in a much simpler manner. Fry your bacon in a pan and set aside. Dump fat from pan and throw in a half a cup of sugar. Heat over low heat, stirring occasionally, until sugar is caramelized. Return bacon to pan and stir to coat. Place on wire rack to cool. Delicious.

You make this far more complicated than it needs to be. I put the bacon on the rack, sprinkle with brown sugar and a dusting of cocoa powder, then put it into a cold oven and turn it up to 400 degrees and let it cook for about 17 minutes. Done. No flipping, no brushing, just candied crispy bacon.
