  • If you don't know how high the temp is, use this method. Put finger in flour then the oil for 5 sec. OUCH! = 160f AHH!!! = 190-200f OWW CRAAPP!!! = 240f OMFG! = 270f OMFGWTFBBQ = 300f If this method won't work, look at your finger. Light red = 160 dark red = 190-200 purple = 240 crispy flour finger = 270 edible finger = 300. Hope this helps.

  • I only fry until desired crust forms. Then remove season and finesh in the oven at 325 for 25 minutes. Dip half the batch in thinned out BBQ suase leave the rest plain. Mac n cheese, koo-laid good ta go.

  • Canola? Peanut oil is better for frying (usually has a higher smoke point), and at least subjectively is supposed to affect the flavor of food less.

    Plus you can buy peanut oil in large quantities for cheaper anyway since they come in large bottles for frying use.
