this recipe actually takes a lot longer than giada makes it seem because the chopping, seeding, and peeling of the butternut squash is pretty tedious. and the cooking time is also a while..
You can always buy the pre peeled, seeded and cut butternut squash at the market. It's as just as good. Also, frozen squash is always an option. I use it all the time and it is as just as delicious. Nutritionists say that frozen is better than store fresh because the nutrients stay.
Find other recipes to make with them. I'm pretty sure they last a while too, so don't worry about using them up in a week or something. And of course, as vladovna said, you can eat the cookies by themselves as well.

I don't use the cookies, I add a tablespoon of brown sugar instead. I have made this lasagne SO many times and everyone loves it!

I think it would give a better flavor if the squash chunks were roasted for little bit first.

I would use fontina cheese instead. I have had this before though and it is out of this world, the cookies really do make it 10 times better.
