  • I don't use the cookies, I add a tablespoon of brown sugar instead. I have made this lasagne SO many times and everyone loves it!

  • I use this dish as my "welcome to fall" dish, but I substitute half the squash for a yam and then mash them rather than puree (I like the texture better). It's soooo good!

  • I wonder if you could substitute gingerbread for the amaretti. Any takers?

  • @AdIgnorantiam I usually either do a gingersnap cookie or even just a pinch of cinnamon - works great everytime : )

  • I think it would give a better flavor if the squash chunks were roasted for little bit first.

  • It's just so wonderful. I've made this dish for special occasions; birthdays, showers, Thanksgiving and whenever we crave it! This recipe is perfect. I top the dish off with some more crushed Amaretti cookies and chopped hazelnuts. My family and friends Absolutely love it! Thanks Giada!

  • I would use fontina cheese instead. I have had this before though and it is out of this world, the cookies really do make it 10 times better.

    this recipe actually takes a lot longer than giada makes it seem because the chopping, seeding, and peeling of the butternut squash is pretty tedious. and the cooking time is also a while..

  • You can always buy the pre peeled, seeded and cut butternut squash at the market. It's as just as good. Also, frozen squash is always an option. I use it all the time and it is as just as delicious. Nutritionists say that frozen is better than store fresh because the nutrients stay.

  • i hate when they add secret ingredients. now if i want to make it right i have to buy a whole box of cookies just to add 3 to a lasagna

  • you can eat the cookies at other times, too..just so that you know

  • Find other recipes to make with them. I'm pretty sure they last a while too, so don't worry about using them up in a week or something. And of course, as vladovna said, you can eat the cookies by themselves as well.
