I knew Simon and Kristina would be in the final since in the 'Interview episode' they kept showing mini clips of them talking, and Simon had a new haircut which shows its been filmed later on and the only reason they would still need his views and opinions at a later date is because he was in the final task.

They film the series months before it airs including the Final Task. But, Sir Alan only makes and reveals his decision right before it is aired on TV to stop people finding out and leaking it to the papers. Sir Alan himself said its hard to judge them since its been months since he last saw them.
