Are the gluten free products bad because alot of them use Rice flour? Im paleo and use almond flour for all our home made breads and muffins. I don't use gluten free products bought at the store but I use alot of recipes from gluten free sites that use almond flour. I would assume thats good but let me know what you think. Thank You!!!

I'm not cutting out all wheat foods from my diet but I did notice when I ate Weetabix that it caused me to have a lot more hunger than I usually did so I had to stop it for the most part. When I ate it, it made me crave more of it and also of other foods in general.
@Manuelcr7 Oatmeal is not bad for you unless it has been cross-contaminated with wheat....which in case would result in bad oats. If you buy oats from a health food store and ask specifically about cross contamination with wheat...you should be ok. On an additional note, whole oats (old fashion) are much better for you than the instant oats.
My results with paleo diet: I have been following the paleo diet (low carb, no grains) since Februar 2010 and lost ~50 pounds now(no chronic-cardio, just weekly strenth and daily walks)! Back to my weight 12 (!!!) years ago! Went from pants 37/38 down to 30/32! And you can do it, too!

I started this 2.5 months ago & feel so much better than I ever have that it's ridiculous. I never thought I was gluten sensitive or anything, but going off wheat has made a HUGE difference for me. Oh, & I've lost 16 pounds already while stuffing my face every day. If you try paleo, remember it should make you feel happy and rather gleeful. If it feels like a chore, do more research
This entire video is based on an assumption that you are eating nothing but bread. Let's say you were eating bread and butter, or bread and peanut butter, or a meatball sandwich.. or anything else with fat. The glycemic index would be significantly lower. I know that doesn't address gluten, but neither does this video

@hanzbananz88 low glycemic index food don't necessarily counter the effects of wheat bread. Eating the organic chicken with flaxseed bread would be much better.
A couple of other good books that address this issue are:
"Seven Events That Made America America," by Larry Schweikart, and
"Willpower: Rediscovering the Greatest Human Strength," by Dr. Roy Baumeister.
"Seven Events" devotes a chapter to the problem of consuming too much wheat and the US government involvement in promoting a low fat and high carbohydrate diet.
"Willpower" briefly addresses why it is difficult to stick to a diet, particularly if our diet has too much sugar in it.
It's great info, Sean, and more people need to hear your message, but I wish your production value was better. You'd be a lot more credible with a microphone and better video. Still, keep up the great message and I look forward to reading your book.
You put a lot of emphasis on the glycemic index when you SHOULD be focusing on the glycemic load. The GL is a much more important number because it factors in how much of the carbs are actually in a serving of food. For example: a GI of watermelon is very high but the GL is actually very low since the concentration of the carbs is small.

Your videos are great, but you left me hanging on the Gluten Free Bread part of this video. Why is it bad. I am 43 and in the past 2 months have just started a gluten free lifestyle, it is working, it is amazing. Are you saying we shouldn't eat any kinds of wheat, period? Sometimes I have a whole wheat wrap for lunch, a little pasta now and then, and maybe some whole wheat toast for breakfast. I've reduced my intake of such things over the past couple of weeks though and feel a little light headed sometimes before lunch, could it be the effect you're talking about here?

I think wheat is worse than table sugar. When i eat wheat, it makes me feel like crap. Sugar does not do that.

@vr4racer Though I'm glad to understand how wheat has changed and the processes of carbs and how our body is effected, I do agree that doing a little research on the GI will show that fat, carbs, and herbs like cinnamon, turmeric, etc can all help the process of our body with these carbs. I know UGW knows this I've seen an old video where he bought kamut and said he'd add a fat with it. Twas an old video though I bet he's cut out on the kamut by now.

A no wheat diet is simply too far a task for anyone that isnt sitting down 18 hours a day, i box and lift weights 6 days a week, and it would be impossible to maintain body composition and energy levels without whole wheat (WITH NO ADDED SUGAR etc) products that i eat, pasta, bread etc Yes i could eat sweet potato, beans, nuts and vegies for carbs but id simply get bored to death and cheat my meals or not get enough calories from them, also, wheat is cheap.

@glennXP3 Depends on your taste buds. Most of the food I used to think tasted good doesn't taste as good to me anymore. Eating real food changes your taste buds a bit. Sweet foods are REALLY sweet now. I'd rather ho with a salad with a beef patty than a hamburger with a bun. I feel better without the bun. I prefer to feel good over a temporary sense of taste.

@codredaniel no grains full stop :) on a more informative note you can use coconut flour for some things, almond meal for others (however this is high in omega-6s which is also bad)
im just commenting as i hear you say things, so another thing came to my mind. what do we eat for iron? meat is terrible for your body since it causes you to have an acidic blood pH, and you cannot get your iron from meat anyways, only dark meat has some iron. beans, you are saying theyre bad? they have iron and protein and carbs and fiber, a complete food. nuts? is this the only thing good for your body that you can eat for your daily iron intake?
why is everyone against insulin spikes? its perfectly normal to to have that prior to physical activity....remember, we once gathered food and fought off predators, so we never had a steady (or paced) environment. we always had short term "spikes"
@UndergroundWellness Whats your take on meat/protein and insulin spikes? I've heard red meat can really drive insulin levels crazy high in diabetics. Insulin is the main "transporter" of amino acids into the bloodstream, and when you consume a high protein meal, it'll spike your insulin a fair deal, but not necessarily spike bloodsugar...atleast so I've heard.

so i only eat 100carbs a day and have lost all my excess weight in 3-4 months. It has been one of the best discoveries for me. For breakfast I eat 1egg, 2 slices of turkey bacon, small amount of cheese on top of half a slice of sprouted grain bread. Will eating this spike my insulin badly because it is such a small amount of grains( only 7grams of carbs)? Also im pairing it with fat and protein so maybe it evens it out a bit......not sure. What do u think?
@WhiteLaura insulin response is additive in meals you eat: digestible carbs (aka grains)=alot, protein= alittle to alot (depends on protein), fat=not much. so it depends on the person: if you're overweight or metabolically deranged then that bread would be a clear no. but if you have all your ducks in a row (sleep is good, exercise is good, lean) then that 1 slice of sprouted bread could be fine...
@DjGoGo09 some steel cut oats can be alright in the beggining. quinoa has some antinutrient problems with it (sapponins etc.) but again ok in beggining in small amounts. no such thing as healthy wheat

Let's say you were eating bread and butter, or bread and peanut butter, or a meatball sandwich.. or anything else with fat. The glycemic index would be significantly lower. I know that doesn't address gluten, but neither does this video

great vid Sean, interesting & informative. However, Q: What about if you combine say a slice of wholegrain bread with some protein and low gi foods. maybe organic chicken breast for example. Wouldn't that counteract the effects on your blood sugar and therefore insulin etc. please answer this for me!!

A couple of other good books that address this issue are:
"Seven Events That Made America America," by Larry Schweikart, and
"Willpower: Rediscovering the Greatest Human Strength," by Dr. Roy Baumeister.
"Seven Events" devotes a chapter to the problem of consuming too much wheat and the US government involvement in promoting a low fat and high carbohydrate diet.
"Willpower" briefly addresses why it is difficult to stick to a diet, particularly if our diet has too much sugar in it.

Dear Sean,
You put a lot of emphasis on the glycemic index when you SHOULD be focusing on the glycemic load. The GL is a much more important number because it factors in how much of the carbs are actually in a serving of food. For example: a GI of watermelon is very high but the GL is actually very low since the concentration of the carbs is small.
I learned this from Johnny Bowden.

Your videos are great, but you left me hanging on the Gluten Free Bread part of this video. Why is it bad. I am 43 and in the past 2 months have just started a gluten free lifestyle, it is working, it is amazing. I have had a good many various gluten free products and am just trying to avoid all breads period, but I really would like to know what is the deal with the GF Bread, I assume it has something to do with brown Rice, now I'm confused as hell....

Are you saying we shouldn't eat any kinds of wheat, period? Sometimes I have a whole wheat wrap for lunch, a little pasta now and then, and maybe some whole wheat toast for breakfast. I've reduced my intake of such things over the past couple of weeks though and feel a little light headed sometimes before lunch, could it be the effect you're talking about here?

I think wheat is worse than table sugar. When i eat wheat, it makes me feel like crap. Sugar does not do that.
Now sugar is bad too ofcourse. But if i need to eat something with carbohydrates, i'd rather eat something with sugar than something with wheat, simply because i don't want to feel like crap.

@sospwa Vegetables are mostly water and fiber... the carbs are pretty low in comparison to grains, especially processed grains.
I heard about a girl that went to Japan and thought she was going to loose weight by eating nothing but rice balls...
Despite her friends telling her it was a bad idea, Guess what, she put on a bunch of weight.(I might have heard that here actually lol, it was awhile ago, can't remember)

who eats bread on there own??? Once you combine the bread with other foods it brings down the glycemic value specially when you add protein or fats to the carbs. Glycemic value has been proven not to work for a long time cant believe you still insisting of giving wrong information and end up making people fatter and scared/paranoid of what they eat.

@vr4racer Though I'm glad to understand how wheat has changed and the processes of carbs and how our body is effected, I do agree that doing a little research on the GI will show that fat, carbs, and herbs like cinnamon, turmeric, etc can all help the process of our body with these carbs. I know UGW knows this I've seen an old video where he bought kamut and said he'd add a fat with it. Twas an old video though I bet he's cut out on the kamut by now.

A no wheat diet is simply too far a task for anyone that isnt sitting down 18 hours a day, i box and lift weights 6 days a week, and it would be impossible to maintain body composition and energy levels without whole wheat (WITH NO ADDED SUGAR etc) products that i eat, pasta, bread etc Yes i could eat sweet potato, beans, nuts and vegies for carbs but id simply get bored to death and cheat my meals or not get enough calories from them, also, wheat is cheap.

@glennXP3 Depends on your taste buds. Most of the food I used to think tasted good doesn't taste as good to me anymore. Eating real food changes your taste buds a bit. Sweet foods are REALLY sweet now. I'd rather ho with a salad with a beef patty than a hamburger with a bun. I feel better without the bun. I prefer to feel good over a temporary sense of taste.

im just commenting as i hear you say things, so another thing came to my mind. what do we eat for iron? meat is terrible for your body since it causes you to have an acidic blood pH, and you cannot get your iron from meat anyways, only dark meat has some iron. beans, you are saying theyre bad? they have iron and protein and carbs and fiber, a complete food. nuts? is this the only thing good for your body that you can eat for your daily iron intake?

@UndergroundWellness Whats your take on meat/protein and insulin spikes? I've heard red meat can really drive insulin levels crazy high in diabetics. Insulin is the main "transporter" of amino acids into the bloodstream, and when you consume a high protein meal, it'll spike your insulin a fair deal, but not necessarily spike bloodsugar...atleast so I've heard.
Admittedly, this is all heresay:) I'd Love to here your opinion.

so i only eat 100carbs a day and have lost all my excess weight in 3-4 months. It has been one of the best discoveries for me. For breakfast I eat 1egg, 2 slices of turkey bacon, small amount of cheese on top of half a slice of sprouted grain bread. Will eating this spike my insulin badly because it is such a small amount of grains( only 7grams of carbs)? Also im pairing it with fat and protein so maybe it evens it out a bit......not sure. What do u think?

@WhiteLaura insulin response is additive in meals you eat: digestible carbs (aka grains)=alot, protein= alittle to alot (depends on protein), fat=not much. so it depends on the person: if you're overweight or metabolically deranged then that bread would be a clear no. but if you have all your ducks in a row (sleep is good, exercise is good, lean) then that 1 slice of sprouted bread could be fine...
