I used to feel the same way about fish. Most U.S. fish is spoiled when it's sold. Try buying mild fishes (cod, haddock). Also, smell the fish when you buy it. If it smells fishy, DON'T BUY IT!! It's spoiled. Fresh fish has almost no smell.

I like avacodo oil, higest smoke point there is and a good taste. Gotta get it onliine though. Mac oil has a pretty low smoke point, you sure about that?

It's not bad for you if done right.
Problem is that fast food restaurants NEVER do it right. So, to get it done right it either has to be homemade or done by a professional chef.
Though i myself honestly go for pan-frying more often. Or with fish, i use Alton's pouch cooking method.

yes, but the dutch oven is coated. iron particulates from the cast iron could get into your food, and that's not good eats!
