  • But don't use cottonseed oil, it has high amounts of phytoestrogens much like hops. Hops btw is used in beer so it makes no sense that it's called the 'men's drink', lol.

  • Which is kinda odd, since the fast food place where I work switched to a corn/soy/cotton oil blend a while back.

  • Well sure..............if you eat it for every meal and every day. Plus if its done correctly (that's not hard) frying is not bad for you.

  • It's not bad for you if done right.

    Problem is that fast food restaurants NEVER do it right. So, to get it done right it either has to be homemade or done by a professional chef.

    Though i myself honestly go for pan-frying more often. Or with fish, i use Alton's pouch cooking method.

  • i like early alton brown much better than the newer seasons. more cooking and explaining, less actors and showy sketches.

  • yes, but the dutch oven is coated. iron particulates from the cast iron could get into your food, and that's not good eats!

  • then explain that to Alton in his Fry Hard II series, where he does southern fried chicken in a cast iron skillet. NO Better cooking surface than cast iron.

  • you missed the point completely.... and that being uncoated cast iron. the temperatures are pretty much the same. my second point was that there are no "particulates" in food as a result of using uncoated cast iron. the guy that said that has no idea what he's talking about. I think he just wanted to sound intelligent with the word "particulate."

  • I used to feel the same way about fish. Most U.S. fish is spoiled when it's sold. Try buying mild fishes (cod, haddock). Also, smell the fish when you buy it. If it smells fishy, DON'T BUY IT!! It's spoiled. Fresh fish has almost no smell.

  • alton is the man...all his recipes are good...except in this episode, he tells u not to fry in cast iron...yet he fries his chicken in cast iron in Fry Hard 2

  • I am also confused about his comments about avoiding cast iron for frying...I thing he says, conolla oil which is a ply-unsat-oil, can cause iron oxides from the cast iron to bind in with the oil, which is unhealthy. I hope that we can get some clarification on this issue.

  • Yeah, he only meant for Mono and Poly Unsaturates,

    He used Shortening on Fry Hard 2, which is saturated. No empty seats on the train, nowhere for iron oxide nasties to sneak in. So, I guess it depends on the fat you use.

  • When he said not to use a cast iron skillet, he was referring to using it as a deep fryer with polyunsaturated oil, because the oxides in the pan will make the oil spoil faster over time. The fried chicken show used vegetable shortening for pan-frying. It's just two different cooking methods, which require two different pans. That clear it up for ya?

  • In addition to the other replies, I believe it may be that in Fry Hard 2 his goal was also not to reserve the leftover oil. It may be okay to use a low-smoke-point oil vs. iron for one fry. His point may be: Don't recycle oil that comes in contact with cast iron.

  • I like avacodo oil, higest smoke point there is and a good taste. Gotta get it onliine though. Mac oil has a pretty low smoke point, you sure about that?

  • I have Avo oil in my local supermarket :) but then, in the UK.

  • Love all these episodes! I don't have cable so I can get my AB fix here. (BTW my favorite oil: Mac nut oil...Nutrition of olive oil and a smoke point to kill for.)
