the director purposely did that. Since brad was said he almost never got to eat normally because of the shooting schedule, they just decided to have his character eat all the time. This only completely true for Ocean's 11.

They did this on purpose. Spielberg wanted to make clear that Rusty hasn't got time (doesn't take his time) to eat proper meals because he's like a workaholic. Therefore he's alway eating/drinking when we see him (= when he's doing something).
