The lint from the towel may compliment the wax paper that was used to knead the dough. Just kidding. Paper bags are good to dry small pasta, especially if you've lightly dusted the paper bag with flour. Drying pasta from a hanger is the best---even a flour-dusted plastic coat hanger is good for the longer pastas. If you lay pasta on a plate that is curved, as she is showing in the video, when the pasta does dry "curved", it will crack and/or break where the plate forced it to curve.
