Pery Broad, an SS man stationed at Auschwitz while Höss was the commandant, wrote of the gas chambers and crematoria in his memoirs. Similarly, they are confirmed by the diary kept by SS physician at Auschwitz Johann Kremer. The post war testimony by victims and perpetrators at the Belsen trial in 1947 of many guards who served at Auschwitz is further corroborating evidence.

This is a generalisation. Hoess was not tortured at Nuremberg, nor was he compelled to either read from a prepared statement or even his own notes. He actually mentioned how well he was treated and his final hand-written statement asks forgiveness. Hoess corrected his prosecutors and had ample opportunity to deny his culpability. He didn't.
His memoirs fully admit his guilt. As do his signed affadavits (in his own language).

Hoess's final statement asked forgiveness of the Polish people and he attempted to smuggle it out. His one claim of torture was left in his original testimony, proving his writings were not tampered with. The German govt was somehow able in the 50s to force the USA/Israel to admit there were never any "gas chamber" deaths on German soil during WWII to cease the psychological damage being done to their citizens. USA/Israel finally admitted there were none on German soil which proved all the US military films about gassings at Dachau were blatant lies.
