Twilight Princess's final boss looked pretty epic to me. Galaxy and Galaxy 2 feel like attempts at epic, but they don't really ask enough of the player and are too simple in some ways (you know, find a weak spot and hit it. Or hit it 3 times for more straight forward ones. But simple for my tastes).
