What logs you use will depend a lot upon where you live and what is available. I make my beds out of Red Fir and Tamarack (Larch) because that's what grows on my property and all over north Idaho... Hard to tell from this video but it looks like this person is using pine...
i second the use of a grinder. i recently made a rustic 4 poster bed frame and used a grinder with an 80 grit disc on it. Got the whole lot done with in an hour or so.
I have the hand peeler but discovered I could use a grinder to get that bark off. You can use a sander to get the groove marks out. Also by using the grinder I can dig deep into a knot-hole to get more charictor out of the wood.
