Making pork fried rice sounds like a good idea. Your food looks great too. I feel you on saving money and using leftovers to make your own takeout. It would probably be difficult to make enough for a family of eight, cause I really wouldn't want to do the whole process twice. Since your way is for a family of four. Dang, I seriously might try this one Friday. Fry me some chicken wings and I'll be good to go. Loves it, thanks for sharing your tips.
You could definitely make this for 8 people by doubling up the rice, 2 cups and vegetables like 16 oz or 24 oz bag (and the meat too, but hey, meat can be expensive sometimes). I would make it in a big pot or dutch oven and work it out. I grew up in a 7-member household and it seemed like every meal was a big production literally, LOL! Now I want some chicken wings, LOL!

I also make fried rice the way you do. I add onions and soy sauce directly to the rice everyone loves it. I make mine with shrimp...yummmm!!!
