nah, it won't speed up da boilin much faster wit da lid on, best just to let er off........I have a 25 gallon stainless steel kettle I use on the ol' fire pit and I git all kinds a ashes 'n stuff in the syrup, but in da end after I filter it out, that stuff just adds to the flaver of it..........
Hey it will evaporate MUCH faster if ya take da lid off of da pot!! Yer keepin all the water in dat way!!!

I know... I use the lid to get it to a boil, then remove it..... Don't know if slows down the evaporation or not? What you think.

Took 3 weeks to boil about 50 gallons (on and off) that made 1 gallon of good syrup!
